Broccoli and Chicken Quesadillas

Ingredients

  • 2 ounces of pre-cooked shredded chicken
  • ½ cup of steamed broccoli, chopped up
  • 1/3 cup of part skim shredded mozzarella cheese
  • 1 whole grain tortilla
  • 2 tbsp plain, no fat Greek yogurt
  • 1 tsp red pepper sauce

Directions

Combine Greek yogurt with hot sauce and set aside.

Heat chicken and broccoli in a large non-stick pan over medium heat. Once heated through remove from the pan and place in a medium bowl.

Toss chicken and broccoli with salt, pepper and garlic powder and then set aside.

Place tortilla in the hot pan and allow to heat through on one side. Flip the tortilla and sprinkle half of the cheese over one half of the tortilla. Top cheese with broccoli and chicken and then sprinkle the rest of the cheese over the top.

Using a spatula fold the tortilla over on to itself (into a half moon) and top with something heavy (ie. A weighted pan or my personal favorite, a teakettle). Allow to cook for a minute or two OR until the bottom lightly browed. Flip the tortilla and cook for another minute or two on the opposite side.

Remove Quesadilla from the pan and allow to cool for a minute or so before cutting into wedges. Top with spicy yogurt and Enjoy!!

An Anti-“health” Manifesto

Your way is not the best way.

I know, I know. I’ve bruised your ego so much you’re probably just going to go back to Facebook. It’s okay, I won’t let my feelings get hurt.

Something I write about often is my love of fitness and healthy eating. (In fact, I’m about to make it a new section on the blog!) I don’t like to focus on numbers, because the terrific way I feel is reason enough to do it, but I’ve lost weight and overall, I think I’m a healthier person than I was last year. I can run a 5k. I have defined leg muscles. I somehow found my biceps and triceps. The double chin I dread in pictures is fading. I don’t need my inhaler after climbing the three flights of stairs up to my room.

Most of all, I feel strong. I know now that I can do so much more than I think I can.

That’s really the most important thing, I think. Because being healthy physically does not mean you’re happy, does not mean you’re better than anyone else, does not mean that everyone can fit in your mold of “health”.

“Fitness” and “health” are subjective terms. What you find healthy, I might find the antithesis of a healthy lifestyle.

So think on that before you tell someone that you want to make them healthy your way. Your way is not the only way, and may not be the best way for that person. Since I’m a college student, I have lots of free time to be spent in the gym. If I had a big-girl job, I would probably have to be on a stricter diet because I can’t spend 7 hours a week in the gym. 

Your way is not the only way. My way is not the only way.

Respect your friends enough to not push them into your way, your health, and your beliefs.

Think about it.

The gym at my school sells AMAZING low calorie smoothies with mango and peach, the two most superior fruits in this world. Unfortunately, they’re $5 a pop.

I seem to have forgotten how to ride a bike. What they say about easy-to-recall things being like “riding a bicycle?”  Not entirely true. If I did ride, however, I’d spring for this beauty. From the bell to the crate to the leather seat, it’s two-wheeled perfection.

So, yesterday I ran my second ever 5k.

My first ever in 18 degrees.

For this race, I threw fashion out the window. It’s hard to see your cute leggings and matching compression top when you’re wearing two pairs of pants, two long sleeve shirts, a hoodie, and the race shirt over that. Add a grey ear warmer, my standby blue Nike hat and a balaclava to the mix, and I’m that kid from A Christmas Story.

Or I’m a bank robber dressed in a tutu and listening to a 3OH!3 Pandora station.

The race itself was less agonizing than one would think running 3.1 miles in 18 degree weather would be. I got warm fast, and the balaclava became somewhat unnecessary. The tutu, of course, was very necessary. The first two miles were a breeze. And then…my right foot felt funny…oh wait, it’s now numb. Party foul, foot. The extra pair of socks I wore managed to both keep me warm and cut off my circulation really well.

Despite my right foot bowing out of the race, I still finished within 20 seconds of my 36 minute goal. I was nearly four minutes faster than the 5k I ran 2 months ago.

A small but meaningful victory.

(Yes, the picture says 36.25. My time is based on the chip times of the people around me, because mine fell off during the race, effectively making me a big sad DNF. It took me at least 6 or 7 seconds to cross the start line. Trust me.)

Fashionably Fit

So, I told you guys last week about my love affair with running. Now it’s time to show you how I do it while still looking fabulous.


A Nike hat is a good way to keep your inevitable flyaway hairs under control.  I recently got bangs again, so to save time I usually just sweep my bangs to the side and tuck them in this hat (with the rest of my hair in a ponytail). The dri-fit fabric keeps your head from getting too sweaty as well. The width is thankfully adjustable; I usually get headaches from wearing hats for longer than 10 minutes, but no pain with this one! It is essential. I would buy one in two colors, which I will describe more later.

Creative and colorful running leggings are a must. I bought these at a TJMaxx for $13 and they just happen to be Nike. Score! This leads me to one of my fitness + fashion principles: buy everything in two very different colors. For example, I bought these blue/purple leggings and a pair of plain black leggings with pink/orange accents. If you have pieces in these bright colors, you can always accent with black or white or go all out and have a fully coordinating workout ensemble. Also, DO NOT think you can just buy a pair of $8 Target leggings and think that they will be effective. The fabric that running leggings are made out of keeps you warm (when running outside. You also won’t have to pull them up constantly (a problem I occasionally have with normal leggings) if you buy the right size.


Good layering pieces are another piece of my workout wardrobe. Dri-fit fabric won’t make you sweat if the sun comes out while you run, and it will keep you nice and toasty when you must run in 30 degree weather (which I do often)! Again, purchase these in your two key colors. I have one black Under Armor top and one pink one. I usually throw a semi-baggy t-shirt on over my base layer because the undershirts tend to have short hems.
