Kale, Chickpea and Apple Salad

This glorious salad is a sure way to get you to make friends with the poor, underestimated and under appreciated leafy green that is kale. You get creaminess from the avocados, some kind of nuttiness from the chickpeas, a nice little zing from the radishes, sweetness from the apples and raisins, a little bit of a bite thanks to the walnuts, and of course, the hearty crunch of the kale.

I would love this minus the chickpeas (allergy). Kale is amazing. Central Market makes a really good kale salad with orange zest and pine nuts and dried cranberries. I could eat it forever.

healthy fruit smoothies.

I’ve never found a “healthy” smoothie that I can stand to let trickle down my protesting throat. They usually taste too “green” to stomach. I’m much more acquainted with a smoothie from Smoothie King or Jamba Juice that is loaded with sugar and not as much “green”.

Anyone want to try and change my mind?
