Redneck Spaghetti

…is what I had for dinner last night!

Too hungry, no pictures. (Is that the food blogger’s form of tl;dr?)

(‘too long; didn’t read’ for the uninitiated)

Redneck spaghetti probably goes against everything Italian food stands for. Except deliciousness.

Its politically correct name is “chicken spaghetti”, and the chicken is probably the only redeeming quality as far as health that this dish has. I mean, it’s ingredients include mass amounts of cheddar cheese, noodles, and a can of Rotel. (Please tell me you guys know the wonders of Rotel + Velveeta + ground beef queso? It better not be a Texas thing. The whole world needs to know about this guilty, guilty pleasure.) It’s basically queso with chicken and noodles. And some olives and onion.

And it was served with huge hunks of bread with more cheese melted on top. And I had feta cheese on my salad (like 3 spoonfuls). I’ve definitely got my calcium for the next 5 years…

Anywho, find a recipe and make redneck spaghetti when you’ve been freshly fired or dumped (or you found out that Nora Ephron died, WHAT THE HECK, so sad). It’s Southern comfort food at it’s best.

(For real, my grandmother was talking about how many funerals she’s been to where this was a main attraction.)

What I Ate: Greek Yogurt is So Hot Right Now

So, you guys remember when I gushed all over the blog about the Ben & Jerry’s new Greek yogurt flavors?

Well, if you missed it, here it is.

I indulged my obsession again this morning when I went on a boredom trip to Target.

I love pineapple, and I love Greek yogurt. This (impulse) purchase was a no-brainer.

I licked the lid when I opened it, because I am a 6 year old that’s just what you do with yogurt, and it was shockingly tart. Much more tart than the vanilla part of the Ben & Jerry’s. I quickly twirled my spoon around in the carton to mix the pineapple on the bottom with the yogurt. Another quick taste. Muuuuch better.

I give this Greek yogurt 8 Big Fat Greek Weddings out of 10. I would really have loved more pineapple, but I’m a pineapple freak special, so you normals would probably be satisfied.

What I Ate: Crawfish (and Tacos)

I’m living in my college town over the summer while I intern at the Y, and my university is super awesome and offers tons of summer events.

Which is why…

…I found myself here—at a crawfish boil!

The event started at 11 am, and by 11:15, when my friends and I arrived, the line was even longer than this! At this point, they ran out of catfish and jambalaya. Major sad face. Luckily, we were there for the main event.

These puppies were hard to eat. Mostly because we had never done it before, and had no training. Oops. My sorority sister and roommate BB also had lots of trouble eating something that had eyes.

So we ditched the free food and walked to the Fuzzy’s north of campus, where I got a tempura shrimp taco (delicious) and a veggie taco (not as delicious) to supplement my crawfish.

While we had to, you know, buy more food, as I kept saying throughout the meal, “this was an experience!!”.

A delicious one.

What I Ate: Big Truck Tacos

Today, B and I hit up the Oklahoma City Zoo and swung by Big Truck Tacos on the way home. I wouldn’t say it was in an excellent part of town, but exiting suburbia is totally worth this amazing food, I promise.

EDIT: Look at young lil’ me, making broad statements about a neighborhood because I saw one boarded up building! For the record, I was totally wrong on my description of Uptown 23rd in this review, and I apologize for everyone I offended. It’s pretty clear from the amount of time I now spend in this awesome district of OKC that I was (like I said) totally wrong. Love and kisses, BTT/Uptown. You are an excellent part of town.

B had a torta (no picture, he eats really fast)

and I had two tacos…

…the Wojo, which has veggies and beans with a splash of lime (my addition) and the Crispy ‘cado, which has two huge pieces of fried avocado, salsa, pico, and crumbly queso blanco (my favorite thing ever OMG, second only to feta, I’m a crumbly cheese addict). I also ordered chips and queso.

The tacos were super flavorful and weren’t overly spicy on their own. My mouth was stinging often, but I’m a huge baby, and pico even makes me yearn for a cold glass of milk. The “Asphault” salsa, which was a bright bottle of orange, fruity, spicy goodness, was probably my favorite part of the whole experience. I applied it liberally to all of my foods and even on each individual chip.

B thought there were too many flavors colliding in the food, however; he prefers more traditional Mexican dishes. He likes tortas from this sketch Latino bodega (it’s legit called Bodega Latina) in the RVA. But even he said that he would gladly make the trek back to BTT.

The truck came to Norman once, but with a much smaller menu, which was understandable. I preferred the offerings at the brick-and-mortar eatery. 

BTT had extremely reasonable prices, in my humble, broke-college-student opinion. My chips and queso, tacos, and drink cost about $10. I’m a medium to large sized girl, and I was so full I practically rolled myself to the car on my $10 meal. You can even bring back your cup for a drink discount later!

Final verdict? Go to Big Truck Tacos. Get the Asphault salsa. Thank me later.

“You Didn’t Know I Liked Sour Things?”

We’ve been dating a year and a half, and somehow it hadn’t come up yet.

But, there we stood, my boyfriend and I, brandishing our OU IDs for free Eskimo Sno, and there I was, asking the spiky-haired owner for the most sour flavor he had.

He doped my ice up with wild cherry and sour apple, then sprayed it with a mysterious liquid.

He sprayed it many, many times.

He said, “Try that and see if it’s good enough.”

(It’s brown because it’s evil)

I spooned out a hefty amount and put it in my mouth.

My face twisted in sweet (and sour) agony. It’s hard for me to describe HOW SOUR this snocone was because just thinking about it is making my mouth seize, and it’s really distracting.

“That’s pretty good,” I choked out.

I couldn’t even finish the whole thing, but I made a quite valiant effort, if I do say so myself.

Sour spray usually costs 25 cents extra. While my bank account could spring for the extra thrill, my tastebuds really couldn’t handle it.

Another New Love Affair

I eat this stuff on everything. Well, everything that isn’t savory. Cause I have no recipes for that yet.

This morning, it made an appearance on my banana, coupled with honey.

I had to drive over 30 miles to get it.

What is this thing I covet so much?

Yes, kids. I’m a Whole Paycheck Foods snob. Their hot bar is heaven. I got over a pound of food in my little brown box yesterday. I HAVE NO REGRETS, people. YOLO and stuff. Sorry I’m not sorry that I love quinoa salads.

Anyway, I also get my almond butter at Whole Foods because it is one of the few places that I can get it straight up ground in front of my eyes and totally clean (meaning it hasn’t cavorted around with other nuts whilst processing). It’s very chunky and not at all like peanut butter, but I find it delicious. And surprisingly, buying it at WF fresh ground is the most cost effective way to get almond butter without peanut contamination. Cause I went to pretty much every food store in Norman, Oklahoma, and one place had almond butter that hadn’t been tainted and it was NINE DOLLARS.

I wouldn’t pay nine dollars for all of the almonds in the world!

Actually, that’s a pretty good deal. I’ll get back to you on that.
